Mexi-Spiced Black Bean Burgers

Adapted from Chef Chloe's Mexicali Sliders


Ingredients:
1 14-ounce can black beans, drained and rinsed
1 small carrot, finely diced or shredded (about ½ cup)
1/2 cup cornmeal
1/2
cup breadcrumbs (I used Ener-G's gluten free breadcrumbs)1 teaspoon vegetable broth powder
1 teaspoon dried minced onions

1/4 teaspoon chipotle chili powder
1/4 teaspoon cumin
Pepper to taste
1/2 cup water
Oil to cook burgers 


Directions:
Assemble all ingredients into mixing bowl. Mash together thoroughly. Using your hands really works! Heat up oil in a frying pan. Roll mixture into a boll and flatten with hands. I used 1/3 cup of mixture for each burger. Cook on each side until brown and a lil crispy. Enjoy! These would be great topped with lettuce, tomato, and avocado. P.S. I used less spice than the original recipe because my stomach is in a very fragile state right now. Feel free to adapt these to your taste. :)


Sorry I don't have a picture but I am making these to take when I go camping this weekend. At least I am hoping I get to go camping! I had to come home from clinicals early because I was sick to my stomach. I didn't throw up, but I'll spare you the other details. I'll just say it wasn't pretty!


I did an amazing workout Tuesday! I walked on the treadmill at 2.5 mph at an incline of 10. Wheweeee! Was sweat ever pouring off of me! I also hula-hooped for 10 minutes and did a bunch of ab exercises. I'm still working on getting fit and healthy despite all these times I slip up! My mom and I are going on a trip in the beginning of August and my goal is to be more fit than I am now. We will be going to bigger places with more shopping and I would like to be able to fit into clothes better than I do now and not be depressed about it.


And last, but not least, I promised a recap of this last year of eating differently, BUT I have been feeling like CRUD lately and it's really hard to explain how much better I feel in general when I'm not feeling very good at the moment. I will post it when I get back to feeling better.


Now, I must go finish packing and doing homework. I'm afraid I have procrastinated wayyy too long tonight!
